Maüa 75% Nicaragua Orange Ginger 70g

The blend of Trinitario and Acriollado varieties gives this cacao its special flavours. Many farms in the town Waslala (or the “cacao capital” of Nicaragua) were planted from seeds, which generated a lot of hybridisation in the trees.
This chocolate bar includes pieces of orange and ginger, adding a pleasant fruitiness boost.

PRODUCTION

Harvest year: October – February (main harvest)
Fermentation: In horizontal wooden crates for 5-6 days
Drying: Pre-drying for 48 hours with a layer of 10 cm solar. Final solar drying for 7 days in wooden and perforated steel beds, slow drying to achieve an adequate balance
Roasting: Mild with a temperature range between 90 and 130ºC for 25 minutes
Packaging: Paper + recycled cardboard
